1 cup margarine
1 1/3 cups white sugar
2 eggs
2 1/3 cups flour
1 tsp baking powder
½ tsp salt
2/3 cup hot milk
1 tsp almond extract or vanilla
Cream margarine until fluffy. Add sugar and continue beating. Beat in eggs. In separate bowl mix the dry ingredients. Add ½ of flour mix to margarine and mix until well blended. Slowly stir in hot milk and extract. Mix in remaining flour. Pour into large loaf pan (2 litre).
Bake at 350° for about 1 hr.
