Cake
½ cup butter or margarine
1 cup sugar
1 tsp. baking powder
1½ cups flour
2 eggs
½ cup milk
rind of a lemon
salt
Cream butter and sugar together. Add well beaten eggs. Sift together dry ingredients and add alternately with milk. Add rind of lemon.
Bake at 350oF for 45 minutes in a 9x5x3” loaf pan.
Icing
¼ cup sugar
juice of a lemon
Mix the juice of a lemon (or more) with the sugar and the spoon over the lemon bread when hot from the oven.
