Jackie Podborski’s Bran Muffins

Ingredients

  • 2/3c wheat germ
  • 3c natural bran
  • 3c All-Bran cereal or 100% bran cereal
  • 3c boiling water
  • 1c butter
  • 2c brown sugar
  • 1c sugar
  • ½c molasses
  • 4 eggs
  • 4c buttermilk
  • 2c raisins or chopped dates
  • 5c Flour
  • 3T soda
  • 2t salt

Directions

  1. Mix and set aside: wheat germ, bran, All-Bran cereal & 3c boiling water.
  2. Cream butter, brown sugar, sugar, molasses, eggs, buttermilk & raisins.
  3. Mix together flour, soda& salt, and stir into batter.
  4. Mix in bran.
  5. Let sit, do not use for at least 24hrs.
  6. Bake 25-30m in preheated 375° oven.
