1 cup red onion, thinly sliced
2 green onions, thinly sliced
1 English cucumber, diced
1 green pepper, diced
6 radishes, sliced
1/4 cup shredded mint
1/3 cup extra-virgin olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1 tbsp. balsamic vinegar
1 1/2 tsp ground sumac
1 tsp salt
3 pita breads
4 cups romaine lettuce
2 tomatoes, diced
In a large glass bowl, combine red and green onions, cucumber, pepper, radishes and mint. Whisk together oil, lemon juice, garlic, vinegar, sumac and salt; pour over vegetables and toss to coat.
Toast pita breads in 375oF oven until crisp, about 7 minutes. Let cool. Break into bite-size chucks.
Add pita bread, lettuce and tomatoes to bowl; toss. Let stand 10 minutes and serve.
