Chocolate Muffins

Yields: 6 very large muffins or 12 normal sized muffins

Ingredients

2 eggs
1 cup (220g) sugar
1 cup (110g) all purpose flour
6-8 tablespoons unsweetened cocoa power
2 teaspoons baking powder
1 teaspoon vanilla extract
2/3 cup milk
2/3 cup butter (melted)
4oz (120g) semisweet chocolate chips

Instructions

  1. Preheat oven to 350oF (180oC).
  2. Grease muffin tin.
  3. Beat eggs with sugar, mix in flour, cocoa powder, baking powder, vanilla and milk.
  4. Fold in melted butter.
  5. add chocolate chips
  6. Bake for 30mins or until cake tester comes out clean.
  7. Enjoy!
