Carrot Cake

Cake
Ingredients

  • 2 cups flour
  • 2½ tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 cup oil
  • 2 cups sugar
  • 3 eggs
  • 1 can (8 oz.) crushed pineapple with juice
  • 2 cups grated carrots
  • 1½ cups coconut
  • ½ cup chopped nut (optional)

Directions

  1. In a large bowl, mix flour, baking soda, cinnamon and salt together.
  2. In a separate bowl  beat oil, sugar and eggs thoroughly.
  3. Add flour mixture and beat until smooth.
  4. Add pineapple, carrots, coconut and nuts (if wanted).
  5. Pour into a greased 13×9” pan and bake at 350oF for 50 to 60 minutes.  Allow 10 minutes for cooling before removing from pan.

Coconut Cream Frosting

  • 1 pkg. (3 oz.) cream cheese
  • ¼ cup icing sugar
  • 1 cup coconut

Bend cream cheese and icing sugar together.  Add a little milk to mixture if required.  Spread over cake and sprinkle coconut over top.
