Cake
Ingredients
- 2 cups flour
- 2½ tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 cup oil
- 2 cups sugar
- 3 eggs
- 1 can (8 oz.) crushed pineapple with juice
- 2 cups grated carrots
- 1½ cups coconut
- ½ cup chopped nut (optional)
Directions
- In a large bowl, mix flour, baking soda, cinnamon and salt together.
- In a separate bowl beat oil, sugar and eggs thoroughly.
- Add flour mixture and beat until smooth.
- Add pineapple, carrots, coconut and nuts (if wanted).
- Pour into a greased 13×9” pan and bake at 350oF for 50 to 60 minutes. Allow 10 minutes for cooling before removing from pan.
Coconut Cream Frosting
- 1 pkg. (3 oz.) cream cheese
- ¼ cup icing sugar
- 1 cup coconut
Bend cream cheese and icing sugar together. Add a little milk to mixture if required. Spread over cake and sprinkle coconut over top.
