Banana Velvet Cake

1 1/2 cups sifted flour (2 2/3 cups)
3/4 cup granulated sugar (1 1/2 cups)
3/4 tsp salt (1 1/2 tsp)
2 tsp baking powder (4 tsp)1/3 cup cooking oil (2/3 cup)
2 eggs, separated (4 eggs)
3 tbsp water (6 tbsp)
1/2 cup mashed bananas (1 cup)
1/2 tsp vanilla (1 tsp)
1/8 tsp cream of tartar (1/4 tsp)

Sprinkle cream of tartar over egg whites; beat until whites form stiff peaks.

Mix sifted flour, baking powder, salt and sugar.  Make a well and add in order, oil, egg yolks, water, banana and vanilla.  Beat until smooth.  Gently fold in egg whites.

Pour into ungreased tube pan and bake at 350oF for 40-50 minutes.
