- 2 Ripe bananas (280g)
- 1 Egg
- 1 tsp Active dry yeast (3g)
- 2 tbsp melted Unsalted butter (28g)
- 1/2 cup Raisins (80g)
- 1/2 tsp Salt (3g)
- 2 1/3 cups Bread or all-purpose flour (350g)
- Peel bananas and mash with a fork.
- Add egg and whisk.
- Add yeast and whisk.
- Add melted butter, raisins and whisk.
- Add salt, flour and gently mix/fold into the batter to form a dough.
- Cover and let rise until doubled in size (about 1 1/2 hrs).
- Gently kneed on a floured surface to made a ball of dough.
- Divide into 9 pieces.
- Roll each piece into a nice round ball.
- Place in an 8×8 baking pan.
- Cover and let rise until doubled in size (about 45mins).
- bake for 15-20 minutes at 375 F/190 C .
